Discovery of equilibrium gels

A soft cream or gel that does not disintegrate after a long time: this has become possible thanks to the discovery of a new state of soft matter. Leading media tell the story of these experiments made at the ESRF.

An international team of researchers has confirmed the existence of so-called “equilibrium gels”, a new state of soft matter. The publication of their study in Nature Materials, is the fruit of seven years of work during which the slow separation of colloidal suspensions into two phases was observed to confirm that it was indeed possible, as predicted by calculations, to make these suspensions evolve into "arrested", stable structures
